Weekly Meals Planning

I was out of town so hence the reason I was MIA ;)
With ice skating lessons, church, school, and dance classes being back in full swing this week menu planning is made to be quick and easy. Healthy too!

Monday (yes a day late) - we had Chili.
Tuesday - Fish, Carrots, and Mash Taters (myself sweet potatoes)
Wednesday - homemade pizza and salads
Thursday -Slow Cooker Chicken and Rice
Friday - Simple Shredded Pork Tacos
Saturday - Fresh Herbed Turkey Breast with wild rice and cranberries (dave will have taters)
Sunday - Pasta :)

Pulled BBQ Chicken Sandwich

To Save Calories
Use Sandwich Thins instead of Buns.
There is a 100 calories in each Thins
Walmart so far is the cheapest place I've found them so far. You can find them by the bread.

Too Easy to make! And tasty too!!

1lb of Chicken Breast
1 Jar of BBQ sauce of your choice - I use Sweet Baby Ray
4 tablespoon of water
You can add honey and brown sugar if you want. If you do you need 1 tablespoon
1 package of sandwich thins

Throw everything minus the Sandwich Thins in crock pot on low for 6-8 hours
The last half of hour, shred chicken with fork slow cook for another 30 min

My husband and kids love this with mash Tatars! I eat mine with a sweet potato.

The Best Beef Stew

To save money
Buy Veggies at local fruit/veggie stand (that's a given) or a local farmers store. (aka Andy's here in College Place, Vince and Joe's in Michigan or Harvest Time - Oxford, MI)

Makes 8 servings
1/2 cup of flour plus 2 tablespoons for later use
2 teaspoons of salt
1 teaspoon black pepper
2 or 3lbs of beef stew meat (depends on how much meat you want)
1 can of diced tomatoes (16oz) I used my one jar of canned tomatoes
3 red skin potatoes (or more if you want) I leave the skin on you can do either or
1 cup of onions chopped
1 cup of carrots sliced
1 cup of celery sliced
1 can of chicken broth
1 clove of garlic minced
2 tablespoon of water

1. combine 1/2 cup of flour, salt and pepper in resealable plastic food bag . Add beef, shake bag to coat beef. Place beef in Crock Pot.

2. Add remaining ingredients, expect remaining 2 tablespoon of flour and water; stir well. Cover and cook on low for 8-12 hours or on high for 4-6 hours.

3. One hour before serving, turn Crock Pot to slow cooker to high. Combine remaining 2 tablespoons flour and water in small bowel., stir until mixture becomes paste. Stir mixture into stew; mix well. Cover, cook until it thickens!

Every week I have someone asked me for a recipe, what I am cooking, how do I plan my meals, and if I could share my tips with them. Hence the reason for the new blog!

My goal is to try to post my weekly menu and then post the recipes daily. I'll try my best to post the deals or savings too to help make those meals.

I can promise that these meals will be quick and easy on both the cook and the pockets. Some of them will be easy on the waist too ;) These meals are also our lunch the next day, sometimes!!!

Look out for yesterdays and today's meal which both were made in the crock pot! Quick and Easy!!
